Vegan mac and cheese is one of my all-time favourite comfort food. Ever! And the best: It’s there for you in about 30 minutes – just when you need it most. All you need is some pasta, vegan cheese sauce and some green vegetable(s).

Variations of Vegan Mac and Cheese

Though mac and cheese often gets associated with a certain type of pasta called macaroni, you can use any pasta you like. Once the pasta is ready you mix it with the vegan cheese sauce and boom you are ready to go.

Personally I find plain pasta with just sauce rather boring unless I add some vegetables. The same applies to mac and cheese. I love to add broccoli but you can also use kale, spinach and even rocket leaves would give this legendary dish a fresh and exciting boost.

I also love to sprinkle this vegan mac and cheese dish with sesame seeds. So both, broccoli and sesame seeds don’t just add some excitement for the eye and comfort your soul but also some fantastic health components for your body and mind 🙂

And another tip for you: Make some more of the vegan mac and cheese to store in the fridge for the next day. To warm it up, fry it in a pan so the macaroni’s get this crunchy, slightly burned look and feel. It’s irresistibly delicious!

Vegan Mac And Cheese Recipe

For the Pasta

  • 250 g pasta of your choice
  • 1/2 tsp salt
  • 1 small broccoli
  • 1 tbsp sesame seeds optional

For the Cheese Sauce

  • 2 cups potatoes peeled or with skin
  • 1 cup carrots peeled or with skin
  • 1/2 cup nutritional yeast flakes
  • 1/2 cup water use the drained boiling water
  • 1/3 cup olive or rapeseed oil
  • 1/4 tsp salt
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder


For the Pasta

  1. Boil the pasta with the salt until ready

  2. Wash and chop the broccoli and fry in a pan for 5 minutes

  3. Drain the water off the pasta and put pasta back in the pot

  4. Add the cheese sauce and mix with the pasta

  5. Serve with the broccoli and sesame seeds as a topping

For the Cheese Sauce

  1. Wash (and peel) the potatoes and carrots

  2. Boil them in a pot with water for about 15 minutes until soft

  3. Drain the boiling water and keep some of it

  4. Mix all the ingredients together and give it a good blend until smooth
