Rocket Salad with Tomatoes, Avocado and Nuts
This simple, yet deliciously satisfying, rocket salad with tomatoes, avocado, seeds and nuts is done in no time and will give your taste buds some serious pleasure. Rocket leaves have a rather particular taste, somehow bold and nutty. And wonderfully hearty. Tomatoes, peppers and onions keep the salad fresh and light. The nuts and avocado provide quite some substance to this rocket salad creation. So this salad is perfect as a side dish as well as the main course – especially in the hot summer months.
Health benefits rocket salad
Rocket, also known as arugula, belongs to the family of cruciferous vegetables. Other well-known family members are kale, broccoli, Brussels sprouts and cabbage. They are all loaded with fibre and antioxidants which make them detoxifying superfoods. These healthy greens also contain vitamin K and beneficial B vitamins. The former promotes bone health and helps to prevent heart diseases, the latter are needed for brain functioning.
In case you sit in the office all day long or need to get your brain going whilst studying for instance, this is a perfectly light but effective meal for lunch. One you can easily prepare the day before and perhaps find a nice little shady place outside the office to eat on your lunch break.
This rocket salad is also a wonderful addition to every barbeque. In case you or your friends are allergic to nuts and seeds you can also leave them out. Place them on the side in a little bowl for instance for everyone to add to their dish as they please.

Rocket Salad Recipe
- 100 grams rocket leaves
- 5 medium sized tomatoes diced
- 1 medium sized avocado diced
- 1/3 cup spring onions chopped
- 1 medium sized onion sliced
- 2 tbsp pumpkin seeds optional
- 2 tbsp sesame seeds optional
- 3 tbsp olive oil
- 1/4 tsp salt
- 1 dash ground pepper
- balsamico cream to serve
Wash and rinse the rocket leaves, tomatoes and spring onions
Chop the rocket leaves in half if they are long
Dice, chop and slice the tomatoes, onion, spring onion and avocado
Mix all ingredients together in a bowl and give it a good stir
Serve with balsamico cream drizzled over the salad
